Our cattle are grass, vegetable and limited-grain fed and live a very happy life on our family farm. Our beef is processed at a local USDA-inspected facility
Pork
Pork that comes from pastured/free range pigs tastes better. Whether it’s the sunshine, the grass, the low stress life, or all of the above, pastured pork is richer, more nutritious, and healthy for you. Their diet consists of grass, leaves, acorns, bugs, and anything they naturally find in the woods, as well as plenty of vegetables, corn stalks and corn. Our pigs are never given any antibiotics or growth stimulators and get plenty of room to play, explore and behave like pigs.Something to note: pastured pork does cook faster than conventionally raised pork, so searing the outside of cuts like chops, then transferring to the oven to finish, is your best bet. Low and slow techniques like braising are also great with pastured pork.
Chicken
Our chickens are raised free range, on pasture, without the use of growth hormones or antibiotics. Meat and eggs from pastured birds have better depth of flavor and are more nutritious, and the texture is firmer than conventionally raised birds. When our baby chicks are old enough, they head to the great outdoors where they get plenty of exercise scratching and foraging like chickens are supposed to do! Adding green forage to poultry diets increases the flavor and nutrition of meat.Chickens on pasture consume insects, worms and fresh plant materials that provide vitamins and minerals in a natural state.Free-range meat is lean, which means slower cooking times yield better results. Slow and low roasting brings about a sublime roasted free-range chicken, where it would make a conventional one soggy and overdone. Searing becomes more important as lower temperatures will give less browning. Learning to cook free range is like learning to cook chicken all over again. The same is true of other free-range, pasture-raised, and grass-fed meats. Our free-range chicken is available by the half or whole.
Turkey
Our turkeys are raised in the same manner as we raise our chickens — free range and on pasture, without the use of growth hormones or antibiotics.
Thanksgiving turkey: Fresh whole turkey, available for pre order for pick up the day before Thanksgiving. Please provide the ideal weight of the turkey; we will do our best to get it as close to that as possible, and within a 5-pound range.
Christmas turkey: Available plain frozen, or smoked, available for pre order and delivered to you Christmas week. Smoked turkey is smoked cold and slow, and is absolutely delicious, with an almost ham-type flavor. Please provide the ideal weight of the turkey; we will do our best to get it as close to that as possible, and within a 5-pound range.
Eggs
Our hens are raised without the use of growth hormones or antibiotics and are free range, which means they’re free to come and go, and they spend plenty of time in our wooded pastures, scratching and foraging. Not only are eggs from free range chickens tastier, but the health benefits are amazing!
According to MOTHER EARTH NEWS, eggs from hens raised on pasture — as compared to factory-farm eggs — contain:
- 1/3 less cholesterol
- 1/4 less saturated fat
- 2/3 more vitamin A
- Two times more omega-3 fatty acids
- Three times more vitamin E
- Seven times more beta carotene
- Up to six times more vitamin D
We raise a wide range of breeds, including Americana, Leghorn, Barred Rock, Rhode Island Red, Black Sex Link, Silver Laced Wyandotte, and Cochin. The diversity of breeds means our eggs are a great assortment of sizes and including dark browns, creamy tans and whites, beautiful blues and soft green.
