Eggs are an affordable, nutrient-rich addition to most diets. Packed with high-quality protein, vitamins, minerals, and good fats, they’re an exceptional superfood. Especially farm fresh eggs, like the ones available at Marshall’s Farm Market.
It’s a fact that farm fresh eggs taste better and are more nutritious than store bought (ie, factory-raised) eggs. Mother Earth News conducted tests in a laboratory that found, compared to the USDA food guide, pastured chicken (vs caged chicken) eggs had up to 2/3 more vitamin A, twice the omega-3 fatty acid levels, three times more vitamin E, and seven times more beta carotene. They also contained 1/3 less cholesterol and 1/4 less saturated fat than caged chicken eggs.
Why? It’s pretty simple: pasture-raised hens eat a wider, more varied diet through foraging (seeds, plants, worms and insects, compared to chicken feed, which is mostly genetically engineered corn and soybeans).
In addition to eating better, pastured chickens roam freely and are treated with respect, kindness and, on our farm, lots of love.
